Some words have been written on this blog, and elsewhere on the internet, about how wholesome reality TV could get with two convicted felons cooking together joined by guest stars. Stewart is mostly a patsy for white collar crime, and if Dogg killed anyone it's all part of the game, but still, the whole arrangement is very strange in a "you wouldn't believe the time traveler if they told you" kind of thing. 

I'm going to try deep-frying bird for this year's t-day, which could end in burning down the house. But my real turkey (or chicken) tip is to spatchcock/butterfly the thing. Find your most robust shears/scissors and cut out the bird's backbone. Then pry it open until the chest bends the wrong way. Yes it's a bit gruesome; this requires a little strength of muscle and more strength of will. Once complete, you have a bird that can basically lay flat on a cookie sheet. Blast this at 450F and cook 14 pounds in ~80 minutes, while keeping the white meat juicy and the dark meat properly rendered. It won't ever look like Norman Rockwell at the table, but it'll taste better. If you have extra time, dry-rub the skin the night before and/or add herb butter under the skin pre roasting.

P.S. It's rare in life I get to introduce a new member to an existing team in a social/casual setting, but when I do, I love to say that so-and-so brings to the tank money, power, respect, leadership, street knowledge, and wisdom.
